The most famous French dish rich in protein

One of the most famous French dishes rich in protein is Coq au Vin. This traditional dish features chicken cooked in red wine along with mushrooms, onions, bacon, and herbs. Here's how it's typically prepared:

Ingredients:

  • 1 whole chicken, cut into pieces
  • 200g (7 oz) bacon, diced
  • 200g (7 oz) mushrooms, sliced
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine (such as Burgundy)
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 2 bay leaves
  • 4 sprigs thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions:

  1. In a large skillet or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the rendered fat in the pan.
  2. Season the chicken pieces with salt and pepper, then add them to the skillet with the bacon fat. Brown the chicken on all sides, then remove from the pan and set aside.
  3. In the same skillet, add the chopped onions and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  4. Sprinkle the flour over the onions and garlic, then stir to combine and cook for 1-2 minutes to form a roux.
  5. Slowly pour in the red wine and chicken broth, stirring constantly to prevent lumps from forming. Add the tomato paste, bay leaves, and thyme sprigs, then return the chicken and bacon to the skillet.
  6. Cover the skillet and simmer over low heat for about 1 hour, or until the chicken is cooked through and tender.
  7. In a separate pan, melt the butter over medium heat. Add the sliced mushrooms and cook until golden brown and tender.
  8. Once the chicken is cooked, add the cooked mushrooms to the skillet and stir to combine. Adjust seasoning with salt and pepper as needed.
  9. Serve the Coq au Vin hot, garnished with chopped parsley.

Coq au Vin is not only delicious and flavorful but also rich in protein from the chicken and bacon. It's often served with crusty bread, mashed potatoes, or rice to soak up the savory sauce.
